Stainless bolts are stronger but what i,ve understood is that they  break instead of stretching.
Your tools suffer also a bit more from the harder metal.
But still its a nice kit for the bike.

I dont have any experience with stainless bolts on bikes.  But, I have worked with stainless pipe and fittings.  We also used a lot of stainless hardware for pipe hangers and stands.  The problem we always ran into was galling of the threads.  Either on pipe or nuts and bolts.  While threading stainless we always had to go slow and use a lot of oil.  Then when screwing on fittings we would use teflon tape or "Never Seize".  Same thing with the small fasteners.  We always tried to use "Never Seize" to prevent galling.  We would have brand new bolts and nuts and still tear up threads.  It would be nice though to have shiny bolts that dont ever rust.

My old 500 has stainless fasteners on it.  I love them.  No trouble after the 7 years that I've owned the bike.  I plan on purchasing a set for my 250/500.  The PO seem to have lost quite a few......
