K5,
I have used an electric turkey cutting knife (wife does not know :-D) to shave down seat foam in the past. I was warned to only do this on a NEW seat foam as the used one would most likely crumble.

I made a custom seat for my '84 KX 125. To shape it, I took bulk off with an old steak knife, then used a belt sander to get the fine shape. To top it off, I took about 1/4" more off then needed, then had super soft foam from an upholstery shop laid on top, and its my favorite seat that my ass has ever made contact with.
